June is nearly over, you guys. June.
I mean, how? and Where? and, and just how are the days flying by?
Last I checked, it was the beginning of May and now we’re almost halfway into summer and wedding season in India is upon us and oh my God- halfway through summer means half the year is over.
I literally just realised this.
Which is a bummer ’cause the next question that just flitted through my mind is, what exactly have I done with the first half of 2018?
Something to contemplate.
I’ve cooked, that’s for sure!
And photographed. Learnt about food photography, how to improve, what to change. I’ve also cleaned out my camera’s memory card too many times to count.
So, that’s something- I guess!
I have also learned to make a refreshing glass of lemonade.
Because lemonade is one of my all time favorite drinks and I don’t really know why I haven’t tried my hand at it before!
Probably ’cause I had a perfectly good brand of lemon juice/lemonade available back home and just picked up a bottle whenever the craving hit.
Looks like – I can’t believe I am saying this- India has inspired me to make some lemonade.
When life gives you lemons and all that.
Something I should actually be thankful for, because have any of you made lemonade at home?
How about the sugar that goes into it, huh?
I mean, mind-blowing!
I was so hesitant to have any bit of my childhood favorite drink when I was back home a month ago, since I know now how much sugar actually goes into making it delicious.
But then my willpower? Not that strong!
When I got back home, the heat and my need for some delicious, refreshing lemonade had me experimenting.
It took a couple of tries- but I got there!
This recipe has got no sugar.
Yep, none whatsoever.
That’s why I love it so much! That and the addition of strawberries.

Minty Strawberry Lemonade
Time: 5 minutes+ chilling time
Yield: 3 glasses
Recipe adapted from acleanbake
1/2 cup freshly squeezed lemon juice
1 1/2 cups frozen strawberries, roughly chopped
3 tbsps. honey
1 cup cold water
5-6 fresh mint leaves
- Roughly chop the strawberries and toss into blender. Add the freshly squeezed lemon juice, honey and mint leaves. Blend until smooth.
- If you don’t enjoy your juice thick, then strain and pour into jug/glasses.
- Refrigerate until cool.
