Hey, you guys!
The past ten days have been an absolute blur! When I think back all I can remember are flashes of moments that include card & board games on repeat and cooking with my two little nieces every afternoon.
It’s wonderful to cook with kids, but you really gotta remember to always keep a lot of free time ahead, especially if you’ve got a meticulous little angel, like my youngest niece, who’s full of a million and one questions. I just love working with children though- their outlook and ideas are so refreshing & entertaining!
Making pizza from scratch is one of our favorite things to do and you’d probably have seen the results on the _littlemiracles_ Instagram Stories a week back! The girls helped make the pizza dough- the sauce was homemade as well but that I had already prepared and set aside- and topped their own mini pizzas! So we had veg, chicken tikka and smore’s pizzas! Quite a variety!
We also made blueberry and chocolate chip oatmeal muffins, Nutella puff pastry rolls and cheesy garlic bread- so it was quite a busy few days!
I have had this recipe ready for a while now and tried every day to get through all the editing to bring it to you guys lickety-split but man, oh man, has it been crazy! Doesn’t look like it’s going to be getting any easier until next weekend so I’m just holding my breath! In the meantime, here’s a summertime salad recipe that is a must to beat the heat!
I enjoyed photographing this salad so much- it’s just so vibrant and full of colour! It is also incredibly easy to put together and the dressing so refreshing!
It’s a great salad for a light lunch especially during these hot summer days and you can even pack it up to take to work, drizzling the dressing just when you’re about to eat.
It’s fresh, it’s juicy, it’s absolutely down right delicious!
It’s like summer in a bowl!

Fresh Strawberry & Chicken Salad
Yield: 2 servings
Time: 25 minutes
Recipe adapted from therecipecritic
1 cup fresh strawberries, sliced
1 cup fresh iceberg lettuce, thinly sliced
1 avocado, chopped
1/2 cup shredded cooked chicken*
feta cheese to garnish
2 tbsp. freshly squeezed lemon juice
2 tbsp. honey
2 tbsp. finely chopped mint leaves
- Mix together the dressing ingredients and pop into the refrigerator while you put together the salad.
- Chop the veggies, slice the strawberries and mix everything together. Sprinkle some feta cheese on top. Drizzle over the dressing when you’re ready to serve.
- I always have some grilled chicken waiting to be put into a salad. Just drizzle some olive oil over a boneless chicken breast piece, rub on some salt and pepper, or Mexican seasoning/Cajun seasoning and grill in the oven at 200ºC/392ºF for 20-25 minutes- until cooked through. Cool and shred.
