This is absolutely my favorite time of year. The weather has cooled down (I talk about the weather a lot, don’t I? Maybe it’s got to do with my name..), it’s the season of joy and love and magic and best of all, strawberry season in India!
It’s pure bad luck that my schedule tends to be crazy these last few months and I always miss the opportunity to try the many strawberry recipes I save throughout the year. I can never keep track of when strawberries will pop up in stores in India, it’s actually pretty erratic. That, or I still have a bit to learn about things around here. A lifetime wouldn’t be enough to figure out the workings of this country!
I was able to throw something together this time just before I drove down to the city for a couple weeks, thanks to this incredibly delicious and easy recipe I stumbled upon.
I don’t know about you guys, but without Pinterest, I’d be lost. Not just when it concerns cooking but every little thing you could possibly want to know more about or get more ideas for. Seriously. I could just browse through the thing for hours on end. That’s where I came across this recipe. I was making strawberry sauce (have you ever drizzled some over pancakes instead of maple syrup? Just one word: Yum.) and still had another box of the juicy, luscious berries left and was seriously debating making strawberry shortcakes when I saw it.
The answer to my diet and health-conscious prayers!
Erin, the blogger behind Well Plated says they’re only 100 calories and I am most happy to believe her! Seeing the ingredients that go into making this, not really a surprise.
Let me tell you, they are absolutely delicious and totally worth the 10 minutes of effort you need to put in mixing everything together and popping it into the oven.
It’s breakfast. It’s dessert. It’s a snack perfect for when you get the munchies. It’s a juicy, sweet and oat-ey bar that even the most hardcore anti-healthy eaters will enjoy!
I actually wanted to substitute the 1/3 cup of brown sugar for a healthier alternative, but I really had no time! The next time I make these, I’ll update the post with the healthier substitutes.

Super Easy Strawberry Oat Bars
Yield: about 12 bars
Time: 10 minutes prep/ 40 minutes baking/ 15 minutes cooling

1 cup old fashioned rolled oats
3/4 cup white whole wheat flour
1/3 cup soft light brown sugar
1/4 tsp minced ginger
1/4 tsp kosher salt
6 tbsp. melted, unsalted butter
2 cups diced strawberries, divided into 1 cup each
1 tsp cornstarch
1 tbsp. fresh lemon juice
1/2 tbsp. granulated sugar
- Preheat oven to 375ºF/190ºC. Line an 8×8 baking pan with parchment paper. Let the parchment paper hang over the two edges so it’s easy to remove and slice when cool.
- In a bowl, combine the oats, wheat flour, brown sugar, kosher salt and minced ginger. Pour the melted butter over the dry ingredient mixture and mix well with a spatula until it begins to clump together. The mixture won’t be too wet, just enough to stick together. Make sure all the dry ingredients are mixed evenly. Remove 1/2 cup of the mixture and keep aside. Press the remaining mixture into the base of the pan, as evenly as possible.
- Take one cup of the diced strawberries and spread over oats mixture layer in the baking pan.
- Mix together the lemon juice, cornstarch and sugar in a small bowl and drizzle over the strawberries spread in baking pan.
- Top with the remaining strawberries.
- Sprinkle the remaining 1/2 cup of the mixture you reserved over the strawberries, sparingly. Strawberries should still be visible through the mixture.
- Pop into the oven and bake for about 35-40 minutes or until the top begins to look golden brown and strawberries are softened. Leave to cool for 10-15 minutes before slicing.
The bars are slightly crumbly, so ensure that they have cooled completely before slicing and lifting.
